Segorbe is the capital of the region called Alto Palancia, which is situated between the mountain ranges Espadán and Calderona. This is an ideal territory for the curing process of hams, because it combines the dry climate typyical of Teruel with the breezes of the Mediterranean Sea, which results in an outstanding quality cured ham.
